Calculating of Sales Quantity
To calculate quantity sold for a batch determine the quantity sold of each recipe the batch is used in.

- In Fig 2 below, the batch Mustard Mayo is used in 3 Menu Items.
- PLU 1 > 25g of the batch being used.
- PLU 2 > 25g of the batch being used.
- PLU 3 > 25g of the batch being used.

- If, for example there are sales of 10 against each menu item then total PLU quantity of the batch sold per menu item are as follows:
- PLU 1: 10 sold which is the the equivalent 250g of the batch being sold.
- PLU 2: 10 sold which is the the equivalent 250g of the batch being sold.
- PLU 3: 10 sold which is the the equivalent 250g of the batch being sold.
- A total of 750g of the batch has been sold.
- The UOM of the batch is 100g.
- Batch Quantity Sold = 750g/100g = 7.5.
- 7.5 multiplied by the ingredients in the batch gives the sales quantity per ingredient in the batch.
- Mayo - Low Fat: 7.5 * 50ml = 3750ml.
- The UOM of Mayo - Low Fat is 10L
- Quantity Sold = 375ml/ 10,000ml = 0.0375
- Mustard wholegrain: 7.5 * 50g = 375g
- The UOM of "Mustard wholegrain" is stocked as a UOM of 2kg.
- Quanity Sold = 375g/2,000g = 0.187 or 0.19 rounded to two decimal places.
