I go to their holidays section and add 1st, 2nd, 3rd and 4th of October as holidays (using the negative symbol). Now, imagine that this person has worked those days. Do you think that the system will delete their working records and replace them for holidays?

Yes, if the rota is not submitted to payroll it will remove the worked hours from the rota and replace with holiday.
