Is there a report that I can run that would tell me what ad hoc products people have set up?

If you want to see all ad hoc products on the system you can go to Property>Products>Search>Advanced Options>Type>Ad Hoc

If you want to know more detail e.g. who created/ modified the product and when, you could run the Product Audit Report. Because Ad Hoc products have product numbers with a 100 prefix you can run the report with the Product Selection of 'Selected product' then select the ones with 100 prefix at the bottom of the list (when ordered by product number).
