I have set up job titles with our yearly increment. This is however not showing in the employees holiday entitlement. I also tried to change the holidays manual which is also not working. Not sure if there is a global setting which is capping this at the 28 days?

There is no cap for salaried employees, this is driven by the job title.
If you have override the Holiday allowance, increments will not take effect.
Please take the override off and ensure the employee has worked the correct number of years for the increment to take effect.
If this does not resolve the issue, I would suggest raising a case to Technical Support who can investigate why the holiday is not increasing.
