All personnel data will be deleted from 4th once the retention period kicks in. If we wanted to keep basic personal data of employees to confirm their employment with the company post the 7 year retention period - is this possible?

There are three categories of information- it is for you to decide how long you want to keep it for, according to each of the pre-defined categories. The system will be defaulted to 7 years, but this is configurable to your business practices. You can change the retention period as you wish.
This is all laid out in our Data Retention Policy which I have linked for you below should you wish to look into this in any further detail. To access this, please go to section 8 - Supporting Documents of the GDPR Readiness Document, and click on the Date Retention Policy link (v).
