I require a report that shows what final holiday pay an employee has outstanding in the amount of days remaining and the daily rate. I have used the above report however i do not understand what the columns balance and amount mean?

The Balance column is the amount of holiday in hours.
If the employee is 'Fulltime' this will be based on the job title. Hours divided by days = hours per day
If the employee is flexible this will be based on the average hours per week divided by average days per week = hours per day.
The amount is therefore
(Hours per day x days remaining) x hourly rate = Holiday to be paid
