Recipes sales are those that are linked to recipes in the system. More on these types of sales can be found here https://fc.force.com/customer/s/article/Purchasing-Inventory-Processing-Point-of-Sale-Data.

Outlet Sales are sales used for reports such as the Summary Usage analysis and information on how to import them can be found here https://fc.force.com/customer/s/article/Purchasing-Inventory-Importing-Outlet-Sales.

Important to note that there is also now a Property Administration configuration setting that can be used to tell the system to update outlet sales from POS sales, this can be found under Property-->Administration-->Customization.
