Can someone please help me understand how additional holidays are worked out please? And how each heading on the additional holidays are calculated?

I need to know how to work out Additional Holidays and the headers within the Additional Holiday field. The Community has lots of great information already in here, so you can use the search bar to look for any resources that can help!
