Let’s say a waiter is earning £10p/h that is paid as £7.83 NLW plus £2.17 p/h from tronc.When this employee is on annual aleave his holiday pay is calculated as £10p/h ( 7.83+2.17 from tronc) but if he leaves his FHP will be paid based on £7.83 hourly rate, but we would like his final holiday pay to be calculated based on £10p/h (with tronc). Is their a way to do that in the system?

They system is not able to include Tronc in final holiday pay as any holiday owed does not go on the rota and therefore will not feed in Tronc.
The 2 options are.
A manual calculation of what the employee would be paid using average days and average hours worked and reduce the Tronc fund accordingly.
Alternatively,remaining holiday can be booked. This will then appear on the rota (the termination date would need to be pushed) and holiday hours will then be used to calculate Tronc.
Topping up hourly rates with Tronc is not best practice and there is talk that the Government will be reviewing this practice.
