I hope this answers your question. Any employment set up with full time you can determine the basic holiday allowance from within the job title, and you can over-ride all holiday from the batch update

Their holiday entitlement is being driven by the job title not the contracted hours, so any amendments to holiday entitlement would need to be done through the override functionality.

Super helpful. With the override, this would be a fixed quantity? Is there any way to allow holiday (for flexible staff) to continue to be based on hours worked BUT stop it from dropping below a minimum amount i.e. where employees are guaranteed a minimum number of days holiday?

For both Flexible and Full time it will look at DAYS not HOURS- the only calculation that looks at HOURS is Casual- it will always look at days worked so you can set maximum but not a minimum. I've attached a link which explains how the system looks at all three.
