How to set a products to be order as each unit but counted per kilo. example: ordering 1 lamb leg, but counting in stock as 2.5kg

This is a very timely question! Today you are not able to set up products in this way. However, after tomorrow's release (i.e. system updates), this functionality, known as 'catch weight' will be available.
