We’ve had a request from an employee to have their personal details forgotten.
I know we don’t have to comply on all matters as we do need to retain some information on grounds of a legal basis but what do we do about basic information such as physical address/phone numbers/email address, etc.? Do I just go into their archived profile and change it to xxxxxx?

You can set the retention period for all employees in the HR Global setting.
If the employee is requesting you delete this before the retention period, I would suggest taking advice from legal as to whether this is a reasonable request.
There are certain fields that require a specific format (Phone number) and you will only be able to enter numbers not x .
