Not sure if this can be done or not but would it be possible once an employee is on the system, any further updates to their bank details can be greyed out for Branch management? So any future updates are done by Payroll/HR

This can be done via the permissions in the user templates.
HR > Users > Templates
Select the relevant user template (ie. General Manager, Assistant Manager) and untick 'Edit Bank Details'

If the 'Create New Employee' setting is still ticked and the template has access to employment details, they will be able to create a new employee and enter the initial bank details but will be unable to update bank details.
