how to modify the Delivery date for a PO ...

There are 2 options based on the scenario outlined:

1) The Delivery Date can be modified by the Purchase Requisition Creator within the Purchase Requisition itself but will cancel the previous Approval & require rerouting; customers normally prefer this method as it allows for re-visibility of spend versus Budget/Forecast:

2) The Delivery Date can be modified by a User with access to Purchasing->Create POs from Requisition using the top Delivery Date or individual PR Delivery Dates; however, this will bypass any additional Approval prior to PO creation:
