Are we able to extend the holiday year on Labour Productivity (formerly known as Team Hours) for one employee only (instead of editing the global setting)?

It is not possible to extend the holiday year for a single employee.

You would need to allow them to carry over the holiday into the new year.

If you only wish the holiday to be available for a specific amount of time. you can use Lieu days and set an expiry.
